Old Elk Distillery, founded in 2013 by entrepreneur Curt Richardson (best known for creating OtterBox), has built a reputation for crafting high-quality spirits through innovation and meticulous aging. Based in Fort Collins, Colorado, Old Elk is led by Master Distiller Greg Metze, a veteran of the bourbon industry with over 40 years of experience. His expertise has been instrumental in shaping Old Elk’s whiskey lineup, including their distinctive Slow Cut Bourbon—a spirit that emphasizes patience in proofing to enhance depth and flavor.

What is the Slow Cut Process?

Most distilleries add water quickly to bring bourbon to proof before bottling, but Old Elk’s Slow Cut Process extends this process over several weeks. This gradual proofing method is designed to maintain the integrity of the bourbon’s delicate flavors, preventing flavor loss due to rapid dilution. The result? A smooth, rich bourbon with a well-balanced complexity.

Old Elk’s Slow Cut Bourbon features a unique mash bill of 51% corn, 34% malted barley, and 15% rye. The high malted barley content sets this bourbon apart, providing a silkier texture and a sweeter, more nuanced profile compared to traditional bourbons. Aged for a minimum of five years, this 88-proof whiskey offers an approachable strength while still delivering a full-bodied experience.

The bottle itself is very unique and stands out on the shelf.  From the faux wood cork to the tapering square bottle, the label and information on the bottle itself are very well done.

It’s nose is warm and inviting aroma of caramel, vanilla, and toasted oak, followed by subtle hints of almond, maple syrup, and baking spices.

The sip starts with a buttery smoothness, unveiling layers of toffee, dark chocolate, and cinnamon spice. The high malted barley content in Old Elk Slow Cut Bourbon adds a distinctive sweetness and silky mouthfeel. Expect layers of chocolate, brown sugar, and coconut, balanced by a mild spice from the rye. The gradual proofing process helps maintain an exceptionally smooth and approachable profile.

The finish is medium in length, with lingering caramelized sugar, light oak, and a touch of baking spice. The finish is clean, leaving a soft, slightly nutty aftertaste.

Old Elk Slow Cut Bourbon is a testament to craftsmanship and patience. At 88 proof, it’s an easy sipper with a unique, malt-forward character that sets it apart from traditional bourbons. The Slow Cut process enhances its balance, making it an excellent choice for those who appreciate a refined, well-integrated whiskey.  While I think its best enjoyed neat, it is also great on the rocks or in a classic cocktail, this bourbon delivers a smooth and rewarding experience. A must-try for those who appreciate precision in bourbon-making.
