Holy smokes, I have found an addition to “Netflix and Chill.” It is starting to turn a little chilly in Kentucky these days and if you are like me, I just want to stay in the house and veg out on a good murder docuseries.
To do that, you need goodies. I prefer a bowl that can be easily accessed while lying prone on a couch.
I can think of no better snack on Earth than popcorn. So, I thought to myself, how can we make this delicious salty treat better? Add bacon, caramel, and, of course, bourbon.
Tada!!! It’s now 1000% better. You’re welcome.
INGREDIENTS:
- 1/2 Cup Kentucky Bourbon
- 8 oz. Crispy Bacon
- 1 Bag Microwave Popcorn
- 3 Cups White Sugar
- 3 tbs.Unsalted Butter
- 1.5 tsp. Kosher Salt
- 1 tbs. Vanilla Extract
- 1.5 tsp. of Baking Soda
METHOD:
- Cook bacon on medium to low heat until crispy and chop into small pieces.
- Make the microwave popcorn as instructed on the bag and empty in a large bowl.
- Stir chopped bacon into popcorn. (Set Aside)
- Mix butter, sugar, bourbon, and salt in a medium saucepan over medium heat until the sugar melts.
- Once the sugar has melted, stir occasionally until the mixture reaches a golden caramel color.
- Remove caramel from heat and stir in vanilla and baking soda. Keep stirring until smooth.
- In the large bowl that contains the bacon popcorn pour the caramel mixture into the bowl and stir using a rubber spatula sprayed with non-stick cooking spray.
- Once the popcorn is completely covered, grab a baking sheet lined with parchment paper and pour the mixture out evenly.
- Let the popcorn cool for at least 30 minutes and then break the pieces up to enjoy.
