Still Austin Whiskey Co. has launched the third release in its seasonal Bottled in Bond series: Blue Corn Bourbon, which is inspired by the winter season.
Distilled from a mashbill of 26% blue corn, 25% white corn, 44% rye, and 5% barley, Blue Corn Bourbon was aged at least 4 years and is bottled at 50% ABV (100 proof). The use of blue corn is meant to invoke the endless winter night sky and the bourbon is described as being perfect for sipping by a fire.
Still Austin Bottled in Bond Blue Corn Bourbon is described as having aromas of “cream soda and malted milk, with a hint of spiced plum and country apple cider.” The palate exhibits “a velvety texture, with intricate notes of dark-chocolate candied citrus, followed by the sweetness of carrot cake and buttercream frosting” and “hints of crème de menthe, nougat, and Manuka honey.” It concludes with a “well-balanced” finish with “chewy notes of dark sherry and crème brûlée, with lingering notes of eucalyptus, oak spice, and black tea.”
The bottle’s winter-inspired original artwork was created by Austin-local artist, Marc Burckhardt, and features a winter crow in front of a winter night sky.
Still Austin Bottled in Bond Blue Corn Bourbon is available now at Still Austin’s Tasting Room (Elmo Road, Austin, Texas) and will be available online and at select liquor stores beginning in December 2023 for a suggested retail price of $79.99.
