Barrell Craft Spirits usually bring the proof with its releases. The norm is around 120 or above, but they have released an “all-occasion” spirit.
Foundation Bourbon is a 100-proof blend of bourbons from Kentucky, Indiana, Tennessee, and Maryland, ranging between 5 and 9 years old.
The company believes that lowering the proof will appeal to a broader audience. We shall see!
A lower proof means less heat, but on the flip side, you immediately get vanilla and caramel with a cherry note. The ethanol is non-existent on the nose.
Sipping the blend brings out cinnamon, pepper, and a bit of toast. The liquid was not thin but very smooth on the tongue. The longer I kept it in my mouth, the sweeter the taste.
The end was drawn out and chewy, with a little coffee flavor mixed with brown sugar. The burn lasted longer than expected for a 100-proof bourbon, maybe 6-8 seconds.
The company has perfected the blending process as it continues to release solid bottles. I have enjoyed all of the company’s releases to date. This release may be my favorite as I am a 90-110 proof bourbon drinker.
